I suggest you look in the documentation about preseeding and, more
precisely, the base-config/late_command which you can you to run
"apt-get install whatever".

Modifying tasks is also an option but may require to modify Overrides
files on your local mirror (don't ask me about this, I don't know much
more).

Preseeding, once you've understood all the concepts, is the best way
to automate installs as it even allows to "pre-answer" the questions
asked by packages not part of the installer.
