It's unclear to me how selecting English / United States can result in 
"British" settings, but it looks like a LANG=en setting is not supported 
(LANGUAGE does not seem relevant here):

#echo $LANG
en
#echo $LANGUAGE
en_GB:en_US:en
#man ls >/dev/null
man: can't set the locale; make sure $LC_* and $LANG are correct

(I can not reproduce an error for apt-get.)

Harald: AFAIK it is not possible to select C in the installer; you can
        of course edit /etc/environment after the installation.
