Strange.  Can you please try a newer image from 
http://gluck.debian.org/cdimage/testing/sarge_d-i/ and let me know if
that works?

Yeah, evms support in debian-installer is not very well
tested/developed at all.  LVM will work, though.

Can you try the image from above and see if this has been fixed?
