use the --debian-mirror and --security-mirror commandline options:

 build-simple-cdd --help

and:

 man build-simple-cdd

you can also define an additional mirror with "debian_mirror_extra" in a
configuration file:

 echo 'debian_mirror_extra=http://some.mirror.org/debian-foo' >> foo.conf

 build-simple-cdd --conf foo.conf
