There is no need for a 'Xen kernel' in wheezy.  That one will work in
both HVM and PV domains including dom0.

Yes, the squeeze version of xen doesn't build the xen-system-amd64
package and there is currently no backport.  But you don't actually need
it; it's just a means to make future upgrades more automatic.  This is
discussed in <http://bugs.debian.org/681637>.
