I did a few more experiments, good news is that the old kernel starts the 
system flawless:

That the new system runs with the old kernel is very impressive work of the 
Debian/Linux Kernel team and very useful for me in this case, a big thank you 
for that!

I am struggling to boot the 5.10.0 kernel manually.

I decided to start experimenting on the system with a fresh bullseye 
installation (debugging one problem at a time :-)):

 I defined a few environment variables to get to a more efficient testing:
