The LED is not set to turn on automatically on boot. If you check your boot scripts for the leds script you'll see that it's hardcoded to only turn on the first led. This, as far as i know, is fixed in testing, but for stable, you either have to modify your bootscripts, or just live with it...
You can turn it on yourself at any time by typing "sudo leds disk-2 on".
And from what i've read, thumb drives only work in port 1 of an NSLU2, i'm not sure if putting debian onto it will change that... Have a look around www.nslu2-linux.org. maybe the solution is over there.
