You must be looking in the wrong places.  :)

Nearly anything based on an AU1x000 (MIPS) chip will have an onboard VGA-quality adapter because it's built into that chip. Likewise for many AT91SAM926x (ARM) and some AVR32 chips. There are many others, but those come to mind right now.

Silicon Motion's SM50x chips are great add-on chips for microcontrollers that don't have onboard graphics abilities. Cogent Computer Systems, among others, makes a line of system-on-module boards that use these chips. They're pretty low-power.
