Both of these machines are listed as having 60M of RAM.  Do they use
some sort of standard RAM that can be upgraded, or is it surface
mounted?

agnesi has 64M surface mounted An upgrade to 128M can be arranged if necessary. Alternatively (or in addition) a 256M PXA255 (a little slower) could be made available.
