You should just remove the leading "_" for the given field in
debian/templates, then run "debconf-updatepo" (which will be done by
dh_installdebconf while building anyway). You will see the
corresponding string disappearing in debian/po/templates.pot.
That would be kind of you if you may wait the french translation,
currently in its proofreading process, for updating your package.
