Well besides the concern of not recognizing the PPC chip, LinuxPPC
YellowDog and the like only supprot PCI based PPC machines. So your
choices are limited even further.

I would suggest m68k Debian. That should run pretty well on that Quadra to
use it as a server. Avoid the overhead of X though, unless you really need
it.
