Hi

Sound shouldn't be a problem, as the mixing desk will be running one TX mix; 
one PA mix and still has 4 free aux buses. Video shouldn't either. If push 
comes to shove, take an analog video feed from one of the camcorders and plug 
it into the projector :) 

However, i guess, another two speakers and amp will need to be hired.
