Also, if we show up with 350 people, will the staff need advance
notice of the number of people eating, and their preferences? How
accurate do these numbers need to be, and how much in advance do
they want them?
If they don't need those data, then how can we ensure that we never
run out of vegetarian/vegan options?
(I assume that special diets (e.g. intolerances, etc.) can be
catered for, but those will need to be communicated ahead of time).
