I'd say the biggest theft risk is with the valuables you bring with
you and store in the overhead space. During the night, when people are
sleeping, theft can occur. Put it next to your feet if you can.
The other scenario is during the scheduled ~20min rest stops, in which
case you definitely should take your things with you when leaving your
seat.

That's fine, and common. These buses tend to be quite comfortable, and
double decker ones even. You can also take a sleeper bus if you want,
where the seats recline close to horizontal. I believe they are
available even though it's a somewhat short route.
