So we're here, two years later.  In an attempt to combat scarcity, I tried
making whatever replacement for umeshu can be made using only ingredients
readily available in Europe.

There are no ume fruits, the biologically closest fruit is apricot.  There's
no shōchū, but since that's hardly anything but C2H5OH and water, replacing
it shouldn't hurt as much as the fruit.  And there's no rock sugar, either.

I have brought a bottle of the result, aged two years.  I hereby invite you
to give it a try tonight on the C&W BoF.
