Upstream confirmed that:* current gspell-1 0.1.* (libgspell-1.so.0.0.0) and gspell-1 0.2.* (libgspell-1.so.0.0.0 as well) are development versions with no stable API, although LaTeXila 3.18 depends on gspell-1 0.1; * gpell-1 1.0.0 (libgspell-1.so.1.0.0) is planned to be released for GNOME 3.20.
Considering this information, and according to upstream suggestions, the best course of action is probably to skip development versions and only start packaging with gspell-1 1.0.0 (libgspell-1.so.1.0.0, package libgspell-1-1). This implies that it will not be possible to package LaTeXila 3.18, but hopefully LaTeXila 3.20 will use gspell-1 1.0.0.
I will notify the Debian GNOME Maintainers, as next Gedit will be able to use gspell.
