Debian 6.0 (but not 6.0.1 yet) is already available on Debian Sid, through the package wine-development.

There are plans to drop the dedicated wine-development source package and go with a single wine source package, cf. https://bugs.debian.org/988246
This change in WINE packaging might be what is delaying the updates of the current wine (stable) package.
