To NAT the traffic out to the lan: how do I go about
doing this? Just a couple of high-level steps should

Read up on iptables and its NAT capabilities. Thinking about it more the networking code may still be too smart for this to get around the problem.

Another option may be to put a cross-over cable between 2 cards on the same box and set the routing to force the traffic over the cable.

No chance of using two real boxes fo your testing?
