Because the more you install from source, the harder it is to make sure you keep up with security updates. If you use pinning and install from unstable you have a little bit more piece of mind that security updates are getting installed, even if you forget that you do have that program running somewhere on the server. I don't know about you, but I get tired of having to periodically browse websites to see if they've had any security fixes lately, meaning I have to re-download and re-install.
