Setting up a mail server

Hi,
I would like to set up a mail server on my box (running sarge) with mail 
accounts that don't necesarily have login accounts.  I would like imap, and 
preferably pop3 also.  I also need to provide smtp authorization.  If I can 
get all that working I'd like to do spam filtering.

Anyway, I just spent the past two very frustrating  days trying to get things 
working with cyrus and exim, then cyrus and postfix, with web-cyradm.  In 
both casses I was able to get mail delivered, and check it with an imap 
client, but could not make smtp authorization work.  So  I could send mail 
from the localhost, but relaying was blocked from anywhere else.  Even 
getting what I got working took a prohibative amount of tinkering with 
various config files and other things, so I think there must be an easier 
way.

So, I'm looking for ideas.  Does anyone know of a way to set this up that's 
not going to have me banging my head on my desk for another two days?
