As Colin suggested, I specified the 'h' flag in the rewriting rules (did
some catch-up reading) and I hope that all is better now... If not,
please let me know and I'll post the exim config, since I apparantly
didn't know what to do with it.

In muttrc, I have specified lists debian-user, _not_ subscribe
debian-user, because then I only get debian-user in the from field, :-(.
If this is stupid, I'd like to know, :-)
