You should look at the package:

cron-apt
This probably does everything you need, without doing any damage to you system by default.... I just use it to do an update and download (not install) any packages overnight). Once I read the changelogs in the morning, I then decide whether to let the install proceed...
I have used cron-apt successfully before to automatically install packages, but this was on a pure 'stable' release of debian, about 4 months into the release. I did not have any third party sources, I used the automatic install solely for security updates, but things still could have gone wrong. I also stoped the automatic install well before the 'testing' release was to become the new stable.

That's just begging for a cosmic ass-whooping, from my experiance when
I tried it.  Doing this is only for people who switched from Windows
and really, really miss things randomly breaking for seemingly no
reason.
