ok, after doing some tinkering... I find this is the best way to
create the list of packages I want:

dpkg --get-selections "*" > package-list.out

by adding the "*" in there, it'll list the state for all packages,
even those I don't have installed, so that this will remove the
packages I don't want on the other host.
