Sid is unstable, woody is testing. I.e., stuff goes into sid and if
there are no problems for a while (~3 weeks or so I think) it moves into
woody. I run woody and it's really quite stable already. However,
security fixes may need longer to move into woody than into sid. You can
get the sources from sid and compile && make package for woody youself,
if need be. Sid can be a pain sometimes, so monitoring of mailing lists
before apt-get upgrade is strongly recommended.

woody has both

List at http://www.debian.org/distrib/vendors#de
Hinner does sid images, I don't know how often, though. In any case,
choose one who lets you make donations for debian included with your
payment and /do donate/
