rewriting the From: line in exim

I have a stupid problem and would appreciate any help.

My canonical e-mail address is andrew_perrin@unc.edu. But since incoming
address is aperrin@email.unc.edu, pine and exim don't like to send mail
out as From: andrew_perrin@unc.edu.

Generally I don't care. But some mailing lists are getting picky about
this, and won't let me post when coming from the "wrong" address.

Can anyone offer advice on getting mail to come
From: andrew_perrin@unc.edu, preferably at the exim level (so I can change
MUAs with impunity)?
