which does contain the necessary files and runs the necessary commands in the
postinst:

MimeType=application/vnd.sun.xml.writer;application/vnd.sun.xml.writer.global;application/vnd.sun.xml.writer.template;application/vnd.ms-word;application/msword;application/x-doc;application/x-mswrite;application/vnd.stardivision.writer;application/vnd.wordperfect;application/wordperfect;application/rtf;text/rtf;text/richtext;text/plain

and:

if [ "$1" = "configure" ] && which update-desktop-database >/dev/null 2>&1 ;
then
        update-desktop-database -q
fi

dpkg -S `which update-desktop-database`
desktop-file-utils: /usr/bin/update-desktop-database

Do you have desktop-file-utils installed? What does evolution show as mime
type?

And what do you mean with Acrobat? OOo can not open PDF so it doesn't register
it in MimeType. And Acrobat has nothing to do with OOo...

Unrelated to your problem, but this is ancient and has some important bugs.
Upgrade.
