In 1.0.1 I see this value defaults to:
LH_LINUX_PACKAGES="linux-image-2.6 \${LH_UNION_FILESYSTEM}-modules-2.6"
(escaped '$')
Is that on purpose?

I guess patches sent to this list are too simple.
