Try `aptitude install grass`, that should give a better explanation why
the dependencies aren't going to be installed.

You should also inspect which versions are available from the various
repositories:

 apt-cache show grass grass-core grass-gui | \
 egrep "^(Package|Version|Depends):|^$"
