Not quite sure why this is filed against the metapackage and not the
d-e-install package.  Anyway...

I believe this preseeding setting in
debian-edu-install/base-config/defaults.networked will solve the
issue:

  # Make sure portmap do not only accept connections from localhost
  # Needed for Squeeze
  portmap/portmap/loopback boolean false
