replace a file in an other package

Hi,

for the local configuration I would like to create a package. I want to
move /sbin/start-stop-daemon to /sbin/start-stop-daemon.real and install
a script, that checks if the daemon should be started or not. But
start-stop-daemon belongs to dpkg. How can I replace it with another
package, but a new version of dpkg shouldn't overwrite my
start-stop-daemon. It should instead replace start-stop-daemon.real.
