At least one package supports "don't build X11" via DEB_BUILD_OPTIONS, in
large part because it *is* a fairly crucial Build-Dependancy of X11, and
thus a workaround was put into place to allow bootstrapping (groff, and
thank you again, Colin, from the bottom of my heart).
