I dont know about XCDRoast, but SCSI emulation is a kernel feature, which has to be enabled/disabled there. The standard kernel-image from debian should have it activated (i think as a loadable kernel module).

I've been using xcdroast and 2.6 (32 bit) for quite a long time.
You have the option to use the ATA transport or directly /dev/hdx

I've left xcdroast because I bought a DVD burner and xcdroast uses cdrecord to burn cd and dvd and there is the problem with the cdrecord licence and dvd. Other GUI uses growisofs for DVD
