The mailing list archives have links to ISOs for the "DFS" images with 
AMD64 support.  That's how I did the last two 64 bit fresh installs (for 
the rest, I mirrored the hard drive).
When you boot these CDs, they come up looking like an already installed 
Debian system, so you can simply log on and use the standard Debian 
tools for building your desired chroot environment on your hard drive.
