"Them" meaning the woody cdrom index lists? That should work, yes.

Those potato entries can be safely ignored. You may just as well remove
them, though.

Not sure, it's more likely to break when changed I think.
The "unstable" instead of "woody" or "stable" is normal, it has something
(don't remember what) to do with how cd images were created. It has
nothing to do whatsoever with any problem you might have, that is, if you
left it at "unstable" :)
