apt.conf(5) doesn't even mention APT::Default-Release. It is not in the
example apt.conf either. This is one of the more common things people
will want to configure in apt, and it should be better documented.

It is in the apt-get man page with the rest of those tool specific
configuration options.=20

       --default-release
              This option controls the default input to the  pol=AD
              icy  engine,  it  creates a default pin at priority
              990 using the specified release string. The prefer=AD
              ences  file  may  further override this setting. In
              short, this option lets  you  have  simple  control
              over  which distribution packages will be retrieved
              from. Some common examples might be -t '2.1*' or -t
              unstable.  Configuration Item: APT::Default-Release
