I got two answers about e-mail clients and I know about two clients
myself. So far:

  - Notmuch Emacs: By default sign-encrypt replies for encrypted mail.
    It can be easy to download sender's key if the mail is signed: just
    one mouse click, but keyserver settings need to be correct in GnuPG.

  - Kmail: Does not set encryption automatically when replying to an
    encrypted mail. One click is needed. By a configuration option can
    be set to encrypt automatically.

  - Mutt: The default is to set signing and encryption.
