If everything else fails, read the instructions [1].

--pdf-engine=PROGRAM

    Use the specified engine when producing PDF output. Valid values
    are pdflatex, lualatex, xelatex, latexmk, tectonic, wkhtmltopdf,
    weasyprint, pagedjs-cli, prince, context, and pdfroff.

For best results, as mentioned in this thread, use lualatex. Caveat:
I just found that in the internet. Use with care :)
