of course the advise is correct to download the Debian installation
image and to put it plainly onto a USB stick (or to burn it onto
a DVD).

That's a bit hard to believe. ISO 9660 is a widely supported exchange
format. (Your mileage may vary with files >= GiB, though.)

It prescribes to use MacOS tool hdiutil to convert the .iso to a different
type of image which then gets copied onto the USB stick.

Has such a conversion been applied to the downloaded ISO ?
I would expect that the EFI equipment of an unconverted Debian ISO boots
from an USB stick on such a machine.
