Depends on what you consider a complete server. Mail is being sent/received only via SMTP, which is handled entirely by postfix. This means it is quite possible to run a mail server with postfix alone. However, you probably want users to be able to access the received mail without logging in on the mail server (as a matter of policy or convenience or both). Because of this you need dovecot and roundcube. Spamassasin and clamav are needed for spam and virus filtering, which would not make sense to integrate in a mail transport agent.
