I checked the contents of schroot_1.4.19-1+squeeze1_i386.deb
and none of these files are symlinks:

% dpkg --contents schroot_1.4.19-1+squeeze1_i386.deb | grep /etc/schroot/default
drwxr-xr-x root/root         0 2011-05-27 10:01 ./etc/schroot/default/
-rw-r--r-- root/root       139 2011-05-27 10:01 ./etc/schroot/default/nssdatabases
-rw-r--r-- root/root       113 2011-05-27 10:01 ./etc/schroot/default/copyfiles
-rw-r--r-- root/root       463 2011-05-27 10:01 ./etc/schroot/default/config
-rw-r--r-- root/root       418 2011-05-27 10:01 ./etc/schroot/default/fstab

The dpkg maintainer scripts also never do anything with these files,
so I would suspect that the circular links were present on your
system prior to your upgrade of the package.
