You remain reachable when your DNS provider is under a DoS attack.
Such attacks happen from time to time to large providers (check the
news).

If your DNS provider uses AXFR to transfer the zone data from you, you
can use the tools you like to edit your zones.

It's not an either-or decision.  You can use both an external service
and a server of your own.
