Okay, I too now have the Postscript/default only. This appears to address the
cups default printer. And the print to file works in both moz and
moz-firefox.

I still don't understand why neither offers the other cups printers, but I can
work around this by switching the default beforehand.

There are other applications that do not see the cups printers. Is there
general a way to make applications aware of cups?

And I just tested gimp again - gimp 2.0 printing over the network to an
epson c62 - it showed the cups printers, but printed postscript as text - had
to cancel the job, unplug the printer, delete the printer from the host in
cups, and then reinstall the printer. No other way to stop the job from
printing. The only way I can get prints from gimp is to print to file and
print from gv - which also only works to the default printer.
