You cannot do this with tasksel, but you can do it with aptitude:

apt-get install aptitude
aptitude

Then go down to the 'tasks' item, hit enter to expand, pick the section
your task is in, enter to expand, highlight the task, and press '-' to
`de-select everything in the task. Press 'u' to finish.
