Look in /etc/init.d for a script named something like SVGATextMode or something similar. If you see something like that, rename it (or disable it in one of several other methods) and reboot and see what happens.

If you don't see such a file try starting in Single user mode (at the LILO: prompt, enter something like 'linux S') and see what happens. If the video mode still changes, try entering at the LILO prompt something like 'linux init=/bin/bash' (a minimal-but-quite-crippled boot-up) and see what happens.
