This should work (I do the same thing with sender_canonical).  Did you
postmap your data file?  Restart postfix after you modified main.cf?

Are you finding that anywhere but the from address?

You may want to setup your mail user client to send mail with the varios
from addresses, and then convince postfix to route it to the right ISPs
relay host based on the address (e.g. the transport table).
