I checked out apt_preferences and it's kind of confusing, but I made my 
best guess:

/etc/apt/preferences

Package: mutt
Pin: release a=stable
Pin-Priority: 1001

This makes it so that mutt is pulled from stable even though everything 
else is from testing. But will it get security updates?  I'm not quite sure 
about that bit.
