I would assume the place to start would be the Debian documentation:
file:/usr/share/doc/iptables/html/packet-filtering-HOWTO.html
file:/usr/share/doc/iptables/html/NAT-HOWTO.html
These are in the Debian iptables package (on sid and woody anyway).
