If it's starting on boot, normally a symlink in the appropriate
"/etc/rcX.d" directory (where X is the run level in question).

Remove the symlink and it will no longer start in that run level.

IIRC, there's a gdm configure program "gdmconfig" that will allow you to
adjust how gdm operates.
