Can you kindly tell what Mail Transfer Agent are you using ? With Exim,
you can re-write your headers via the /etc/email-addresses file. Say
for user rodney, you can put in a line like

rodney: rodney@engine.net.au

inside the email-addresses file. Restart the exim daemon process after
you comment out the line starting with `smtp' inside your
/etc/inetd.conf. Do restart the inetd daemon too.

HTH.
