What I ended up doing was configuring two copies of exim, based on instructions I found in the Exim FAQ at <http://www.exim.org/>. The primary copy delivers only local mail, and doesn't perform header rewriting. Non-local messages are forwarded to the second copy over port 26, which performs header rewriting. If the aforementioned FAQ doesn't answer your questions, let me know and I'll throw together some more detailed instructions. Cheers!
